[eks/echo-server] Deprecate ALB controller specific echo-server Nuru (@Nuru) (#893)

what

  • Revert eks/echo-server enhancements from #591
  • Simplify configuration
  • Document that echo-server is intended to rely on defaults, to verify default configuration is adequate, and that it should avoid having any settings that
    affect other ingresses.
  • Moved previous version to deprecated/

why

  • Make echo-server most broadly compatible with ingress controllers etc.
  • Remove the need to configure anything but the host name, simplifying deployment and configuration to the point where it can be deployed quickly on demand
  • Try to avoid future feature creep or reliance on side-effects
  • Support customers currently using the current version
