embed-proxy v1.2.1 (bugfix)

Fix

• Multi-instance install no longer conflicts on the binary file:
  each instance copies itself to /usr/local/bin/embed-proxy-
  (default keeps legacy /usr/local/bin/embed-proxy)
• Install skips copy when the target binary already exists
• Uninstall removes the instance-specific binary
• Add --help / -h usage output
