Fix
- Installing/upgrading while the service binary is running no longer fails with
"open /usr/local/bin/embed-proxy: text file busy" (ETXTBSY):
the program now stops the instance service, retries the copy, and re-enables it - Menu banner service status now queries the current instance unit
(previously always showed the default instance state)

Fix
- Multi-instance install no longer conflicts on the binary file:
each instance copies itself to /usr/local/bin/embed-proxy-
(default keeps legacy /usr/local/bin/embed-proxy) - Install skips copy when the target binary already exists
- Uninstall removes the instance-specific binary
- Add --help / -h usage output

- Run multiple independent instances from one binary
- Instance name via --instance or EMBED_PROXY_INSTANCE
- Per-instance config: /etc/embed-proxy/.json, service: embed-proxy-.service

- Menu 8: list / switch / create instances
- Instances isolated: port, auth key, upstream, routes
