Patch bump 0.5.0 → 0.5.1 for a bug-fix + polish release.

HarmonyOS hilog support (#67) is intentionally held for 0.5.2.

Before tagging v0.5.1

The release build triggers on the v* tag off main, so merge the fix PRs first — especially the ones that fix bugs already in main:

• Flush the pause buffer when the adb stream ends #68 — pause buffer data loss on stream-end (High)
• Fix UTF-16 correctness bugs (initial-load skip, BOM-sniff drift, odd-offset stall) #69 — UTF-16 initial-load skips ~8 KiB + offset bugs (High)

Then tag v0.5.1 to publish the Linux/Windows/macOS binaries.
