We were missing the label for each activity type in the new activityTypes table and corresponding Tinybird data source. This PR adds them.
The labels being set in the SQL migration were extracted from the Insights app, in the platform config files from here. Theyŕe basically replicating what we used to have hard-coded there, onto the database and Tinybird.
