v1.2.1 - Backup Manifest Fix

Fixes a Windows backup crash when the detected log directory is recorded in the manifest.

Change:

• directory entries in the backup manifest are now stored as metadata-only entries instead of being hashed like regular files
• adds a regression test for directory manifest entries
