chore: remove Stainless attribution and infrastructure

Changes

• Remove Stainless attribution from legacy generated-file headers, security reporting, README guidance, repository placeholders, and Java examples.
• Remove Stainless-only Maven artifact workflows/upload helpers, obsolete mirror-specific CI behavior, and legacy .stats.yml.
• Keep Castiron generation metadata, protected CI checks, and the public Maven Central release workflow intact.

Out of scope

• Renaming X-Stainless-* request headers, retry/idempotency identifiers, OpenAPI x-stainless-* extensions, generated fixture identifiers, changelog history, or third-party provenance.

Reviewed the complete exact-head diff. The legacy Stainless attribution and mirror-only infrastructure are removed coherently, while Castiron metadata/mock routing, public Maven Central publishing, runtime behavior, and API declarations remain intact.

Validation at c98878cfa27d0eb3f22ba9259cdc8ada3d669ab5: complete 181-file audit, attribution/infrastructure reference checks, transformed-spec hash verification, diff hygiene, and exact-head lint, build/Jackson, tests, API compatibility, Java 8/25 runtime, version matrix, and required CI. Modified production/test files only lose attribution headers; no file newly crosses the 1,000-line threshold.
