Upgrade to wasmtime 48 and wit-bindgen 0.61 - #107

wasmtime/wasmtime-wasi/wasmtime-wizer 47 -> 48.0.1 (library and the CLI pin in scripts/setup.sh, which must stay in step with the embedded engine), wit-bindgen 0.60 -> 0.61.1. No source changes were needed: host and guest crates compile clean, and `just all` passes with every expected/ golden and lockfile byte-identical, so the bump is behavior-neutral for all four runner paths. The toolchain baselines in AGENTS.md and docs/findings.md follow; the individual findings keep the version they were observed against.
