To pair the controller, long-press the Sync button next to the USB-C port (see front button 2 at https://en-americas-support.nintendo.com/app/answers/detail/a_id/27538/). The green LEDs in front should light up.
Might need udev rules (the ones in Nintendo JoyCon seem to work also for the Switch Pro.

Once connected, the blue ring on top seems to light up.
The Switch Pro Controller did not seem to connect with hci0, the chip in my Thinkpad T480s:
[151072.248870] bluetooth hci0: firmware: direct-loading firmware intel/ibt-12-16.sfi
But the Switch Pro Controller did connect with hci1, a tp-link UB500 Bluetooth 5.0 Nano-USB Adapter:
[152492.773016] bluetooth hci1: firmware: direct-loading firmware rtl_bt/rtl8761bu_fw.bin
It works on my machine (Thinkpad T14 gen-1):
[ 6371.090642] Bluetooth: hci0: Found device firmware: intel/ibt-20-1-3.sfi
