Chicken Vindaloo

- 2 lb Boneless Skinless chicken thighs
- 1 tsp paprika
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp mustard powder
- ½ tsp cumin
- ½ tsp cinnamon
- 8-9 cloves
- 3 oz red wine vinegar
- ¼ tsp Tamarind Concentrate
- 4 arbol peppers
- 5-6 garlic cloves
- ½ oz in ginger
- 3 yellow onions finely chopped
- 2 tablespoon Oil
- 1 teaspoon Black Mustard seeds
- 1/4 cup Jaggery
- 1/2 cup Water
Toast and deseed arbol peppers. Soak in vinegar.
Blend spice mix to powder.
Coat chicken in powdered spice mix.
Blend marinade. Marinate spiced chicken for 12-24h.
Sauté onion until caramelized.
Dissolve jaggery into water.
Mix chicken into caramelized onion.
Add water jaggery mix. Stir well to deglaze. Steam 15 minutes.
