Molasses Cookies

- 10 oz all-purpose flour
- 12 Tbsp unsalted butter, (softened to room temperature)
- 3½ oz dark brown sugar
- 1¾ oz granulated sugar
- 4 oz unsulphured molasses
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 2 teaspoons ground ginger
- 1½ teaspoons baking soda
- 1½ teaspoons ground cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
Whisk together flour, baking soda and spices. Set aside.
Combine sugars with butter.
Blend in molasses.
Beat in egg and vanilla extract.
Slowly blend in dry mixture. Cover tightly and allow to rest for 1-24 hours.
