Vegetable Stock

Ingredients

• 2 stalks celery, coarsely chopped
• 1 medium potatoes, cut into large chunks
• 1 medium carrots coarsely chopped
• 1 medium onion, coarsely chopped
• 4 ounces mushrooms, halved, optional
• 3 to 4 cloves garlic, crushed
• 8 cups water
• 1 tablespoon soy sauce
• 3 large bay leaves
• 1 dash salt
• 1 dash pepper

Procedure

Combine ingredients in Instant Pot. Soup setting for 240 minutes.

Drain broth.

Excepting bay leaves, left over vegetables may be blended with a cup of broth to prepare vegetable soup.
